Today is my blogiversary, so I had to do something special! I started this blog a year ago today (I didn’t write my first post until the day after) and I can’t believe a year has gone by so quickly. I dove head-first into the blogging community, and was welcomed with open arms. I’m so glad I actually DID this after thinking about it for so long! Blogging has been a great creative outlet for me over the past year, and though I don’t reach as many readers as other blogs do, it is still extremely rewarding for me. It feels so good when people tell me they tried my recipes or liked a certain post. I owe it all to YOU! Here’s to another year of tasty creations and random ramblings!
5 ways to use a pomegranate
A while ago, my friend Steph texted me: I bought a pomegranate. Now what? I gave her some suggestions and then realized I’d actually never posted anything about pomegranates on the blog…and hello, this magical fruit is my blog’s namesake. I buy a pomegranate every week when they’re in season. Though they require a little time to peel, they are extremely beneficial to your health and taste delicious.

There are a few techniques on seeding a pomegranate, but I prefer the no-water method because it’s fast and my fingers don’t get cold. Check out this guys youtube tutorial, he is a pom-seeding master! If you’re curious about the water method, this video is also very helpful, but lengthy. Once I’ve seeded my pomegranate, I store it in a wide mouth mason jar in the refrigerator and just cover it with the flat part of the lid, no need to screw on the band.
what to do with your pomegranate seeds
Once you’ve seeded your pomegranate, you can simply just eat the seeds, or try one of the ideas below!
I eat greek yogurt every day, and my favorite topping is pomegranate seeds. It adds a perfect crunch and burst of flavor without the added sugars or calories you get from yogurt that already has fruit in it.
Oats are one of my favorite breakfasts, but I can’t eat them without some sort of delicious topping. The cold pomegranate seeds provide a nice contrast against the hot mushy oats.
I made this pomegranate kale salad on Christmas Day and everyone RAVED about it. I can’t wait to make it again! So delicious. I’d also like to try this version that sounds like more of a meal than a side salad.
This is extremely easy but looks fancy. Simply melt chocolate, spread onto wax paper, and sprinkle the seeds on before it hardens. Presto! Chocolate Pomegranate Bark. Someday I’d like to attempt this No-Bake Chocolate Pomegranate Tart, and if I’m really ambitious, this Pomegranate Panna Cotta.
I love adding pomegranate juice to my champagne, but you can also use the seeds as a pretty garnish as well. I would love to try this Pomegranate and Orange Sangria, it sounds divine! Or this Pomegranate Cosmo, yes please.
